Opened April 24, 2026 at SAHARA Las Vegas — the first restaurant led by a Black chef on the Las Vegas Strip. The name references the Maroon people of Jamaica, who escaped enslavement in the 17th century, settled in the Blue Mountains, and developed jerk cooking from the wild peppers and herbs they found there. Kwame Onwuachi brings that history to a live-fire kitchen built around a custom jerk pit, merging Afro-Caribbean tradition with the American steakhouse format. His third restaurant, after Tatiana in New York and Dōgon in DC.
